Baked Apples with Mincemeat
Marmalade Ice Cream (makes about 1 litre)
Combine the marmalade, cream and sugar. Use a food processor or blender briefly to do this if you want smaller pieces of orange.
Taste and add the orange juice to your liking.
Pack into a plastic tub with lid and place in freezer.
Alternatively churn in an ice-cream machine until softly whipped then spoon into plastic tub and cover with lid. Place in freezer.
Remove from freezer about 20 minutes before serving and place in fridge to soften.
Lemon Curd Eton Mess
Break the meringues into large chunks.
Sandwich two pieces of meringue at a time together loosely using the whipped cream and place in a pretty serving bowl.
Drizzle the lemon curd over the bottom layer.
Proceed to build the meringue and cream up to form a mound drizzling the lemon curd over as you go.
Finally spoon the passion fruit pulp over the top of the mound if you wish or just use more lemon curd.
Refrigerate until ready to serve.
